In 1941 Peter Schlumbohm invented the Chemex in USA. It is an hourglass shaped glass container with a wooden collar around the middle tied together with a piece of leather. A special paper filter is folded and inserted into the top of the brewer. It is then rinsed with hot water to get rid of the paper taste of the filter. Once the rinsed water is discarded the coffee grounds are put in to the filter.
Now the grounds must be covered with water and allowed to bloom. Once blooming is complete add the hot water in a constant pour until the target weight is reached. After brewing remove and discard the filter and used grounds.
