The Siphon was first patented in the 1830’s by Loeff of Berlin but a lady named Mme. Vassieux patented the first commercially successful vacuum brewer. The Siphon is one of those brewers designed to be used in public, the whole process is very pleasing to the eye. It is a vacuum brewer which means that instead of pushing water through the coffee grounds, the water is introduced to the grounds, left to brew a bit and then the coffee is sucked by a vacuum through a filter to then be served. I won’t go into the science here, but it is very interesting and looks cool. The siphon is an immersion brewer.
